Hummus means ‘chickpeas’ in Arabic and is actually an abbreviation of the Arabic name of the dish ‘hummus bil-tahina’, which means hummus with tahini. The ingredients are pretty humble: chickpeas, tahini, lemon and different spices. But, the taste and amount of variations that you can create is incredible.
Eaten widely through the Middle East and Mediterranean hummus is so versatile in what you can pair it with – from flatbreads and meats to just crudités. Egyptians of the 13th and 14th century AD enjoyed feasting on a version of this dish called ‘hummus kasa’, which means crushed hummus. It is even reported that a jar of chickpeas and heads of garlic were found in the tomb of the boy-king Tutankhamun!
