Spicy Thai Salmon

A dish that is authentically Thai with some punchy flavours. This dish sits perfectly in the middle of a dinner table, served with some fluffy rice with the accompanying sauce drizzled on top.

A dish that is authentically Thai with some punchy flavours. Not only does it remind me of my time in Thailand eating a variation of this dish at the many street food stalls on the beach, but it especially reminds me of feasting with my Thai Godmother.

Food is a central part of our family get-togethers and the flavours of our dishes are as punchy as our rambunctious conversations. This dish sits perfectly in the middle of a dinner table, served with some fluffy rice with the accompanying sauce drizzled on top.

Method

  1. Cook the salmon – choose to either bake in the oven or BBQ in the garden. Don’t worry about needing to add any flavour to the salmon – it’s all in the dressing!
  2. In a pestle and mortar, add the garlic, ginger, chilli, lime juice, salt and three of the five kafir lime leaves
  3. Then transfer to a bowl and add lemon, soy sauce and fish sauce, distilled vinegar, a dash of sesame oil, sugar
  4. When your salmon is cooked plate up and pour the sauce on top
  5. Dress with your garnish and served with steamed rice
  6. Although this sauce is for the salmon in this recipe – really you could use as a dipping sauce for perhaps some other seafood – octopus or prawns for example.

Recipe Ingredients

Garlic, diced: 4 cloves
Fresh ginger - diced: 1 tablespoon
Fresh chillies: 3
Lime juice: 4 tbsp
Lemon juice: 2 tbsp
Soy sauce: 3 tbsp
Fish sauce: 1 tbsp
Distilled vinegar: 2 tbsp
Sesame oil: 1 tbsp
Sugar: 2 tsp
Salt: Pinch
Kaffir limes leaves: 3
Garnish:
Ginger, sliced: ~
Coriander: Handful
Red chillies, sliced: ~
Fresh lime: To taste
Kaffir lime leaves: ~
