Roasted Red Pepper Hummus

Hummus means ‘chickpeas’ in Arabic and is actually an abbreviation of the Arabic name of the dish ‘hummus bil-tahina’, which means hummus with tahini.

Hummus means ‘chickpeas’ in Arabic and is actually an abbreviation of the Arabic name of the dish ‘hummus bil-tahina’, which means hummus with tahini. The ingredients are pretty humble: chickpeas, tahini, lemon and different spices. But, the taste and amount of variations that you can create is incredible.

Eaten widely through the Middle East and Mediterranean hummus is so versatile in what you can pair it with – from flatbreads and meats to just crudités. Egyptians of the 13th and 14th century AD enjoyed feasting on a version of this dish called ‘hummus kasa’, which means crushed hummus. It is even reported that a jar of chickpeas and heads of garlic were found in the tomb of the boy-king Tutankhamun!

Method

  1. Thoroughly rinse the chickpeas in a colander under cold running water and tip into the large bowl of a food processor along with 60ml of the oil and blitz
  2. Add the garlic, lemon and tahini.
  3. Add roasted red peppers and garlic, save a few peppers and garlic for the garnish and blitz once more
  4. For those who like a smooth hummus, blitz again, for those that like a little texture stop there.
  5. Place in a dish and with the back of a spoon make a slight dip in the middle. Drizzle with a little more olive oil, and place a red pepper slice and garlic glove to dress.
  6. For the roasted red pepper, simply roast red pepper and garlic with olive oil, salt, pepper, smoked paprika and a little za’atar spice in the oven.

Extra virgin olive oil: 80ml
Big garlic cloves, peeled and crushed: 1-2
lemon, juiced then ½ zested: 1
Tahini: 3 tbsp
Red pepper: 1

Smoked paprika: ~
