Gyros and Greek Salad

Method

Serves 4-6 people

1. In a large bowl, combine the marinade ingredients and stir well.
2. On a chopping board, place the chicken thigh down with plastic wrap over it. Pound until it is about 1 cm thick with a rolling pin or other heavy kitchen item.
3. In a different large bowl, combine the chicken thighs and marinade and stir well. Cover and refrigerate for at least one hour (or up to a day).
4. Preheat oven to 400°F/200°C.
5. On a baking sheet, use the onion half as a base and position the skewer vertically like a spit. Skewer the chicken thighs individually, rotating each one 90 degrees.
6. Bake for 1.5 to 2 hours until cooked. Let cool for 10 minutes.
7. In another bowl, combine the greek salad ingredients and toss well.
8. Carve off slices of chicken to fill a pita and serve with tzatziki.
