Adjara Khachapuri (Georgian Cheesy Bread)

There are various khachapuri in Georgia, differing from region to region. Primarily round in shape, the boat form of this particular recipe comes from Adjara on the Black Sea.

In Western Georgia the khachapuri consists of intertwined dough and Sulguni cheese, wrapped around a skewer and baked over a BBQ.  Even the round ones vary. Some have thicker dough, some have cheese inside and some have cheese inside and outside.

The restaurants in Georgia don’t look like much from the outside – it is the food that people come for. I remember going to one such restaurant in Batumi, on the Black Sea coast, for Adjaruli khachapuri. It was as towards the end of the day but in Georgia that really doesn’t matter. People eat at all hours. In addition to the excellent “boat” I was presented with, there was a fabulous atmosphere with family and friends coming together to eat, chat and laugh.

The below recipe will make two boat shaped loaves.
