I am not much of a cook but I do enjoy good food and fabulous flavours. Having spent five years in my early 20s living in Mallorca, Spain I am particularly fond of Spanish food and, in particular, some of the more traditional Mallorquin cuisine.
One of my favourites is one of the most simple. Regularly served as a breakfast or lunchtime snack, Pa amb oli literally translates from Mallorquin (a dialect of Catalan spoken in Mallorca) as ‘bread and olive oil’. Essentially, the Mallorquin version of cheese on toast. This straightforward yet delicious dish immediately transports me back to Mallorca and the vine-covered terrace of my little stone casita in the mountains.
Often served with just garlic and tomato, I also like to add cheese, cured ham or chorizo into the mix.
And eat… ideally in the sun with a glass of wine in hand. Es muy rico!
