Wherever you travel in Indochina you can always buy a quick, delicious bowl of noodle soup from a wheeled cart, a market stall or fixed shop. A lovely fresh flavour comes from green herbs and freshly squeezed lime to be added just before tucking in. Replicating a version back in the UK is simple and the ingredients can be flexible allowing you to choose seasonal veg and your favourite flavours.
This dish can be adapted to be vegetarian by substituting alternatives for the fish and meat, as well as the fish stock.
