The hotel has 10 restaurants including a French and Cantonese, both of which hold Michelin stars. In addition, there are Japanese, molecular tapas (looks like a strawberry and tastes like fish type thing) and a street cafe/bakery. Sushi chefs are not renowned for being very talkative, but the restaurant here has only 8 covers and the chef speaks excellent English so can explain exactly what you are eating.
